How do I presumably not know who am I attracted to? I know I’m only ever attracted to someone once I’ve formed at least a friendship with them and even then, I rarely ever experience such feelings, so how would I not be able to know who I’m attracted to?

Well think about a guy who comes in. Depending on how he comes off to you, depends on how your attraction is to him. Something usually happens before friendship, which is the quick intuition about the person. There is pre-minute attraction (how the guy presents himself. what he looks like, smells like, what is happening around him), and post-minute attraction (how the interaction went). Before you even seen this guy for the first time, you don't know if you're attracted to him or not. (You may think he's good looking, but then you screen him when he talks the first time to you and see if he's attractive, not your type, creepy, etc.)
